Confession: when the Million Pebbles team picks a lunch spot, healthy wins. Not in a sad desk salad way. In a “we’d actually like to feel awake at the 2 PM meeting” way.
Lately, our type has a name: Chicken Salad Chick.
A quick story, because we’re nerds about origins. The company was founded in 2008 in Auburn, Alabama. It started in a home kitchen. Chicken salad sold to neighbors, hair salons, and teachers’ lounges via a car magnet on a minivan. The health department eventually stepped in (politely) and said you can’t do that here. So they opened an actual restaurant on Opelika Road. Then another. Today the brand has grown to more than 225 locations across the South and beyond, all built on a recipe that started as a side hustle.
We love that arc. Small idea, made carefully, scaled with patience. Sounds familiar. Kind of like the quiet math behind compounding decisions we write about…
Also, the Fancy Nancy is genuinely good. So if you spot a Million Pebbles team member parked at a Chicken Salad Chick with a Cup-Sandwich-Soup combo and a stack of client notes, you’ll know exactly what’s happening. Healthy fuel, good story, no apologies. (Yes, this is the same team that wrote a whole article about a one-in-50-million lobster. We follow our curiosities.)
